It’s the first time I see wine combined with jelly but I have to admit I am not big fan of jelly myself. However, this recipie just caught my eye as it’s such a creative way to serve a bit of white wine with a floral touch…
INGREDIENTS:
1/4 cup of dried lavender leaves
2.5 cups of water
4.5 cups of white sugar
1/4 cup of white wine
2 drops of blue food colouring
1 drop of red food colouring
1/2 bottle (1 packet) of liquid pectin (to make the above jelly-like)
1- In a saucepan add water and bring to boil. Add then the lavender leaves and stir, remove from heat almost immediately and leave aside for 15 minutes.
2- Pour the liquid through a fine strainer and reserve the liquid. Take 2 cups of this water and add to a saucepan. Add sugar, white wine and food colouring. Bring it to boil stirring it constantly and continue for 1 minute while boiling. Remove from heat and remove the foam.
Finally, fill sterilized jars (remember to leave at least ½ inch from top) with the mix prepared and screw the lids. Process in a boiling water bath.
